C is for Carrot Cake

I. Love. Carrot. Cake. I see it as so quintessentially Spring. I think it’s because I associate carrots with rabbits, and rabbits with Easter, and Easter with Spring. In case you were curious of my thought process…

Anyways, I made the best Betty Crocker cake mix Carrot Cake mini bundt cakes. They were literally light as air. I think it all has to do with the mixing process I did. Let me tell you about it.

The first thing I did was let the eggs come to room temperature. I never even thought of doing this until I heard Ina Garten talking about it on an episode of Barefoot Contessa. It may not seem like it’s that important , but it makes a world of difference. Once they had sat out for a bit, I began the baking process. I dumped the dry mix into my Kitchen Aid bowl and measured out my liquids. I added the water first slowly, just a splash at a time. Once the water was well mixed, I began the oil. Make sure you mix it a lot, keeping the speed on low (another tip I learned from Ina – this keeps from too much air getting in the mix). After that was all mixed up, it did take a bit, I added in the eggs (cracking them in a bowl first! Shells = ew!). Add the eggs one at a time, mixing well after each. Next, turn your speed up to medium and let it go for two minutes. Then it’s time to put the batter into your pans, this is what mine looked like:

Isn’t it adorable?! I had never heard of mini bundt cakes until my mom got this for me! Anyways, I filled them about three-quarters of the way full, and stuck them in the oven at 350 for twenty minutes. I took them out and voilĂ , they were perfect! Aside from the few that didn’t come out clean…

As far as frosting goes, I tried to take a cream cheese frosting I had and thin it with water and milk, but it just ended up curdling… it was gross. So instead, with less than half the tub left, I ditched my glaze idea all together and piped the remaining frosting into the centers.
